- chicken and rice soup
- vegetarian tortilla soup, uses black beans instead of chicken
- lentil bolognese
- turkey chili, but you can substitute the turkey for ground pork or beef and it works even better imo. I always cook it on the stovetop
- creamy white chicken chili, it feels more like a soup to me and is better after reheating imo. ground chicken worked fine, I cooked it with half a white onion in the same pot before doing anything else. and just use an entire can of corn. works great with monterrey jack cheese as suggested. fresh flour tortillas also are delicious.

- creamy sausage and peppers pasta, use hot italian sausage. can substitute dry mustard (a teaspoon or two is good). spinach amount doesn't need to be spot on, 5–6oz is good
- slow cooker honey garlic chicken noodles, OK to substitute Shaoxing wine 1-to-1 with rice vinegar (but it'll be a little bitter), and Sriacha sauce 1-to-1 with Cholula hot sauce
- flour tortillas — I use a big cast iron skillet and it works great!
- cornbread — needs a few minutes longer to bake imo, can substitute half the sugar with honey
- oatmeal raisin cookies — no need to change oven racks though
- chocolate chip cookies — underbaking is less of a risk than you think!
- pumpkin bread — add some molasses for flavor depth + moistness
- cinnamon raisin bagels — use 3tsp yeast and proof with the brown sugar
- banana bread — use 2 8-inch loaf pans or half the recipe. the position of the oven rack is really important for this one!
